Beans and Greens.. as a pizza roll!


So this is my first blog post.. Bare with me.


I took left over beans and greens and made them into a pizza roll with Trader Joe's garlic and herb pizza dough and it was amazing!!!



 I didn't measure anything but will give quick run down.

 Beans and greens: 2 bunches of kale, 1 bag of spinach, 3 garlic cloves sliced, lots of onion powder, garlic powder, salt, pepper and mushrooms, cooked down with 2 tablespoons of EVOO and 1/2 cup of water. Mix in 1 can of cooked beans after greens have cooked down. Season with salt, pepper, garlic and onion powder to taste.

Preheat oven to 425degrees.

Roll out pizza dough into rectangle no longer than cookie sheet, sprinkle one long side with Daiya mozzarella shreds,and top with beans and greens. Roll as if you are rolling cinnamon rolls. Place on cookie sheet lined with parchment paper. Sprinkle top of roll with garlic powder and Daiya cheese.

Bake for 13min, serve immediately.
